Chili con Carne Recipe


Ingredients
* 3 lbs ground chuck
* 6 tablespoons bacon grease
* 3 medium onions, chopped
* 4 cloves garlic, minced
* 4 tablespoons chili powder
* 1 tablespoon cumin powder
* 1 tablespoon flour
* 1 large can tomatos
* 2 bay leaves
* 1 tsp salt
* 1 tablespoons oregano
* 1 tablespoon vinegar
* 1 1/2 tablespoons brown sugar
* 1 large can red kidney beans
Directions
1. In a large pot, heat bacon grease, add onion and garlic; cook until onions are tender but not brown. Remove onions and garlic and set aside.
2. Mix chili powder with the 1 Tbs flour. Pour in pot with hot bacon grease. Stir until the mixture is smooth.
3. Add the meat and stir until brown.
4. Put onion/garlic mix back in pot. Add all remaining ingredients except beans. Simmer 30 minutes.
5. Add beans and simmer 2 hours. Add liquid as needed to get the thickness you want.
6. Remove bay leaves and serve hot with cornbread.
