Tips and Facts About Chili and Chile
According to Webster's Dictionary, the term "Chile" (ending in an "e") refers to a tapered, pungent pepper. And capitalized, refers to the country of Chile. The term "chili" (ending in a "i") refers to the spicy, tomato, beef based soup dish. The terms are so frequently used interchangeably today that it is difficult to fault anyone for using the words either way.

However, it is important in cooking to be aware that chile powder and chlii powder are not the same. Chil(e) powder is generally all powdered chiles, while Chil(i) powder is a mixture of chile powder, oregano, cumin and garlic.

To reduce the heat of a chile pepper, remove the seeds and membrane inside the pepper. The membrane is where most of the heat comes from (not the seeds, as commonly believed). When removing the seeds and membrane or chopping peppers, wear rubber gloves if possible. If gloves are unavailable, be sure to wash your hands thoroughly immediately after. Some peppers are hot enough to irritate the skin and especially the eyes should you rub them prior to washing your hands.

Many peppers have a skin that is undesirable in your food, so you should remove the skin as follows: Burn the skin until it is black on all sides over an open flame, grill or broiler. Place the pepper in a paper bag for 15 minutes. Remove from bag and rub the skin off with a towel, fork or your fingers. If using peppers in a sauce that requires running through a food processor, you can remove the skins by pouring the sauce through a suitable strainer or sieve. Our preference is to use the burnt skin method above.

You can store fresh peppers unwashed and wrapped in paper towels in the refrigerator for up to three weeks. Dried peppers can be kept in the refrigerator for up to 4 months.
