Mean Jack Chili Recipe


Ingredients
* 1 pound stew meat or chuck roast, chopped into bite size chunks
* 1 pound lean ground beef
* 1 tablespoon cooking oil
* 2 cups water (adjust as needed)
* black pepper, to taste
* 1/2 cup Chili powder
* 1 tablespoon Salt, adjust to taste
* 2 Bell peppers, chopped
* 2 onions, chopped
* 2 teaspoons Ground cumin
* 2 teaspoons Paprika
* 3 teaspoons Cayenne pepper
* 1 teaspoon Oregano
* 1 can Chicken broth (12-15 oz)
* 1 Can tomato sauce (12 oz)
* 2 cans diced tomatoes (14 1/2 oz each)
* 1 tablespoon crushed red peppers
* 2 Jalapenos peppers, minced
* 1 bay leaf
* 1 can beer
* 1 tablespoon honey (or substitute sugar)
* 6 garlic cloves, minced
* 1 large can cooked red kidney beans, drained
* 1/2 cup Masa harina (in Mexican food section of store)
Directions
1. Heat 1 tablespoon cooking oil in a large soup pot and brown the meat.
2. Add the onions, garlic and peppers. Simmer 2 or 3 minutes.
2. Add all ingredients except the masa and beans. Simmer 2 hours. Add more or less water as needed to make a soupy or chunky chili, whichever you prefer.
3. Add the beans and simmer another 5 minutes.
4. Add the Masa and stir until chili thickens.
5. Remove bay leave and serve with cornbread.

Note: Good chili is whatever taste good to you. The secret is to start with the recipe and finish with your own taste buds. The last step before removing from heat should be to taste and add spices as needed to suit your own personal taste.
