Chili Pie Recipe
Ingredients
* 1 lb lean ground beef* 1 onion, chopped
* 1 tablespoon vegetable oil
* 1 tablespoon Worcestershire sauce
* 1 dash Tabasco Sauce
* 8 oz tomato sauce
* 1 cup cooked red beans (canned or cook your own)
* 1/2 teaspoon chili powder
* 1/2 teaspoon cumin
* 1/2 teaspoon salt
* 8 oz package cornbread mix (or make your own - Recipe here)
Directions
1. Using a large (10 inch) oven proof skillet (cast iron works well), brown the ground beef and onion in 1 tablespoon vegetable oil on medium heat.2. Add the beans, chili powder, cumin, salt, Worcestershire Sauce, Tabasco and tomato sauce. Stir and simmer for 15 minutes.
3. Make the cornbread batter using mix instructions (or make your own). Pour the cornbread batter over top of the chili pie in the skillet.
4. Transfer skillet to preheated 450 degrees F. oven and bake for 20 minutes or until the cornbread topping is golden brown.
Makes about 6 servings.
Note: If you choose to make you own cornbread using the recipe in the ingredients list above, it may make a little more batter than needed. Use about 1/2 inch thickness of cornbread batter on top of pie.
