Red Hot Chili Recipe
Ingredients
* 2 large cans red enchilada sauce (mild or hot)* 1 cup water
* 4 pounds lean ground beef
* 1 tablespoon vegetable oil
* 1 medium onion, chopped
* 5 cloves garlic, minced
* 1 teaspoon cumin
* 1/2 can coke or pepsi
* 4 whole jalapeno peppers with seeds, minced
* 1 (10 oz) can tomato sauce
* Salt and pepper to taste
* 1 teaspoon cocoa powder(unsweetened)
* 2 1/2 tablespoons Masa flour
Directions
1. In a large soup pot, brown meat in 1 tablespoon vegetable oil.2. Add onion and garlic. Simmer for 10 minutes.
3. Add all remaining ingredients except masa. Bring to a boil. Reduce heat and simmer for 2 to 3 hours.
4. Add more water during cooking according to how soupy you want your chili.
5. When almost done, dissolve mesa in a little water then add to chili to thicken.
6. Taste and add salt, pepper or other spices as needed to your taste. Makes about 8 servings.
