Ron's Kitchen Sink Chili Recipe


This is a spicy, meaty chili with a lot of ingredients. That's why it's called "Kitchen Sink" chili.

Ingredients
* 2 cups dry pinto beans (or 2 cans -15 1/2 oz. ea.)
* 1 tablespoon vegetable oil
* 1 onion, finely chopped
* 2 lb lean beef, cut into bite sized cubes
* 1 large bell pepper, chopped
* 6 tablespoons chili powder
* 1 1/2 tablespoons cumin powder
* 1 tablespoon paprika
* 6 cloves garlic, minced
* 1 teaspoon cayenne pepper (or to taste)
* 2 tablespoons cocoa powder (unsweetened)
* 1 can chopped green chilies (4 oz)
* 1 large can diced tomatoes with juice
* 1 small can tomato paste
* 1 can of beer
* 1 tablespoon honey
* 1 teaspoon brown sugar
* 1 teaspoon white vinegar
* salt and pepper to taste
* 2 tablespoons masa flour
Directions
1. If using dry beans, cook in 2 quarts of water until tender, about 2 hours.
2. In large soup pot or heavy kettle, brown meat in vegetable oil.
3. Add onion and garlic; saute over medium heat until onion is transparent.
4. Add all remaining ingredients except masa flour. Bring to a boil. Reduce heat and simmer 2 hours.
5. Stir often while simmering and add water if a thinner chili is desired.
6. When done, add masa flour to thicken. Taste and add salt, pepper or spices to taste. Makes 6-8 servings
