Texas Chili Recipe
Ingredients
* 3 pounds lean chuck roast* 2 pounds lean ground beef
* 2 large onions, chopped
* 5 garlic cloves, finely chopped
* 3 tablespoons cumin powder
* 1 tablespoon salt
* 2 teaspoons black pepper
* 1/2 teaspoon cayenne pepper
* 3 tablespoons chili powder
* 2 cans whole tomatoes (28 oz each)
* 2 cans tomato sauce (15 oz each)
* 1 1/2 cans red enchilada sauce (15 oz total)
* 1 1/2 cups water
Directions
1. Cut chuck roast into bite size chunks.2. Combine with ground beef, onions and garlic in a large pot.
3. Brown on medium heat, stirring occasionally.
4. Add seasonings, stirring to mix well.
5. Add tomatoes, with juice, by shredding in hands.
6. Stir in enchilada sauce and bring to a boil. Reduce heat and simmer over low heat 1 1/2 hours.
7. Add water and cook additional 1 1/2 hours.
Serve hot with cornbread.
