Vegetarian Chili Recipe


Ingredients
* 1 medium onion, diced
* 1 ea clove garlic
* 1/2 cup green pepper, chopped
* 1/2 cup red pepper, chopped
* 1/2 cup yellow pepper, chopped
* 2 carrots, sliced
* 1 broccoli, chopped
* 1/2 cauliflower, chopped
* 1 small can corn
* 2 can (14 oz) red chili beans
* 16 oz tomato puree
* 2 tablespoons oil
* Salt, pepper, basil, cumin, chili powder and hot pepper sauce to taste
Directions
1. In a large skillet, fry the onion, garlic, and peppers in oil until onions are translucent.
2. Add the carrots, cook for another few minutes, and then add the broccoli, cauliflower, and corn. Continue cooking until the vegetables are heated through, but still crunchy.
3. In a large pot pour in the beans, add the tomato puree, and stir in the vegetable mix. Bring the mixture to a boil, mixing occasionally.
4. Turn off heat, taste and add spices to your liking.
Makes 8 servings.
